| These are the ingredients that settle at the bottom of the Khlii's huge cooking pot: salt, coriander seeds, cumin, garlic... At the end of cooking, this deposit is collected with fat and set aside , this is called Agrich.
It can be used as an ingredient to enhance the taste of certain dishes, sometimes simply to cook a fried egg, it is salty and very tasty.
In the past, it was the Khlii of the poor because it costs less and contains a few crumbs of meat that escaped from the strips of Khlii during cooking.
